Indulge in Rice Krispie Coated French Toast

Rice Krispie Coasted French Toast

That’s right, we took french toast and made it better. The Rice Krispies add an incredible texture, plus we’re topping these bad boys with a cranberry orange maple syrup. It’s perfect for any old regular #SundayFunday, but you could also dish this out on Thanksgiving or Christmas morning. It’s that special – and that good.

French toast is underrated. I’ve known many people to pick pancakes or waffles over french toast, but I’m a french toast gal. Not only is it the easiest of the three to make, but the texture is the best. It’s pretty much bread pudding, and we’re not complaining.

This recipe was inspired by School, one of the best brunch spots in Toronto. They’ve got a Krispie Krunchy French Toast on the menu and we were in love from the very first bite. We knew we had to try making something similar at home.

Today was a really chilly fall day, so we had to start out our #SundayFunday with some serious comfort food – and a decadent cocktail, which we’ll get to.

For the french toast:

For the cranberry orange maple syrup:

To make the syrup:

  1. Combine the maple syrup, orange zest and cranberries in a small saucepan and bring to a boil over medium-high heat.
  2. Once it comes to a boil, simmer for 10 minutes on low heat.
  3. Serve as is (or strain if you just want the flavours of the orange and cranberry).

To make the french toast:

  1. Beat together egg, milk, cinnamon and vanilla in a shallow container.
  2. Place the Rice Krispies in a second shallow container immediately next to the egg and milk mixture.
  3. Heat a lightly oiled griddle or skillet over medium heat (you don’t want to have the pan too hot as you’ll burn the Rice Krispies)
  4. Dunk each slice of bread in egg mixture, soaking both sides.
  5. Then dunk the bread in the Rice Krispies, coating each side.
  6. Place in pan, and cook on both sides until golden. Serve hot.

NOTE: If you choose to use really thick slices of bread, you may want to cook the french toast in a pan until golden and then place in the oven at 300 F for 10 minutes to ensure it’s cooked through.

Now, let us tell you about this wicked cocktail. Introducing the cranberry ginger pecan martini. Yes, that is a crushed pecan rim. It’s got bourbon, Grand Marnier, cranberry juice and ginger beer, which all pairs perfectly with this french toast. Now, you may not normally have bourbon for breakfast, but trust us – the ginger beer makes it light and refreshing. Plus, who doesn’t want to chew on pecans while sipping on a deliciously boozy concoction? You can grab the recipe here.
