Lavender Lemonade

Lavender Lemonade was the very first cocktail we made together. We have no idea why it took us this long to throw it up on the blog, because it’s absolutely delicious and takes us right back to being roommates living at Bloor and Bathurst (in Toronto). So nostalgic. You better believe we had some good times drinking this.

We all love lavender and one night decided we wanted to incorporate it into a cocktail. We were still young and didn’t have much cocktail making experience, hence why it’s so simple to make. We did however know that the easiest way to add a lavender flavour would be to make a syrup using sugar and water. Once we had that we grabbed our vodka (it was our liquor of choice in the early years) and figured lavender mixed well with lemonade flavour-wise, and there you have it. A simple and highly crushable cocktail. And it converts non-lavender fans, trust us. ⁣

Also, can we talk about the colour? It’s so perfect. The lavender syrup itself is kind of a dark mauve colour, but when it mixes with the lemonade it turns to a soft pink. And despite the vibrant hue, the lavender flavour is not overpowering, it’s perfectly balanced. Whip these up and sip ‘em in the sunshine.

Start by making the lavender simple syrup. Add the water, sugar and dried lavender into a small saucepan, stir to combine. Bring the mixture to a boil over medium-high heat. Once boiling, turn the heat to low and simmer for five minutes, then set aside to cool. Once the mixture is cooled, strain.

To make the cocktail, fill a cup with ice and add the vodka followed by the lavender simple syrup and lemonade. Garnish with a lavender sprig if you’ve got it.
