Pineapple Mint Margarita

Who doesn’t love a good margarita? We’re big fans, especially in the spring and summer. Plus, I picked up a sweet bottle of tequila when I was in Arizona that I was just dying to play around with. After some recipe tasting, we settled on one we’re pretty excited to share with you – a pineapple mint margarita.

If you’ve never experienced pineapple and mint together, you’re missing out on an amazing combo. The flavours go together really well, it’s the epitome of freshness in a glass.


A traditional margarita is supposed to be 50% tequila, 29% Cointreau, 21% fresh lime juice. Now that’s what we call a boozy drink. Ours is a bit different. We added fresh pineapple, mint and a touch of simple syrup to the mix as well as swapped out Cointreau for Triple Sec. While Cointreau is delicious, it also carries a way heftier price tag than Triple Sec and when you’re using it in a mixed drink that has a number of prominent flavours (like this one) it’s almost a waste to use the pricy stuff. Save Cointreau for sipping on its own over ice, you know?

What we especially love about margaritas is how easy it is to make a big batch of them. This is a great cocktail to make when you’ve got a big group going, which is why we made these for our party game night. But, they’re also great without the booze too! If you’ve got pregnant friends or are doing a brunch and looking for a light smoothie, just omit the alcohol and add equal proportions of water instead.

*Makes 2 drinks, double or triple based on your group size or how thirsty you are.

  1. Add the tequila, Triple Sec, simple syrup, lime juice, mint and pineapple to the blender and pulse until smooth.
  2. Time to sugar the rim. Add a handful of sugar to a small plate and grab a margarita or champagne glass. Cut a very small indentation in a wedge of pineapple and circle the top of the glass with it. Then dip the rim of the glass in the sugar.
  3. Fill your glass with your maragarita mixture and garnish with a slice of pineapple.
  4. Cheers with your pals and enjoy this delicious bevy.
