Halloween is coming, so even our cocktails are on theme. For our Ouija Board night we needed something that would look the part, and this cocktail was perfect. We created the perfect purple hue with gin, lemon and beet juice. It’s also light and refreshing, making it the perfect pairing for a Halloween candy binge.
I know what you’re thinking: beet juice? In a cocktail? YES. Beet juice is naturally sweet but also has an earthy flavour that pairs really well with gin and lemon juice. Just trust us, when have we ever led you astray?
- 1 oz gin
- 1 oz beet juice (if this aspect disgusts you, you can always sub pomegranate juice, but don’t knock it til you try it)
- 1 oz lemon juice
- 1/2 oz rosemary simple syrup (get the recipe here)
- Soda (to fill the glass)
- A juicer (to turn beets into beet juice, but if you don’t have one you can always buy beet juice)
- Cocktail shaker
Start by juicing the beets (be careful, beet juice stains and it can easily make your place look like you just committed murder if you spill). Then fill your cocktail shaker with ice and add the beet juice, lemon juice, simple syrup and gin. Shake for about ten seconds. Fill rock glasses with ice and strain the cocktail mixture into the glass. Top with soda. Cheers!
