The simplicity of the Tom Collins is likely why it’s stood the test of time. People have literally been making (and drinking) it since the 1880’s. It’s still hugely popular – and that’s because it’s delicious. Made with only gin, simple syrup, lemon juice and soda, think of this drink like a sparkling lemonade but with the welcome addition of gin. Sounds like we could have a couple of these, you? The best part is that it’s likely to be in your bar or kitchen right now, so you can.


Also, can I tell you that I ate five Maraschino cherries while shooting this drink? That’s what happens when you put them in a bowl like that. They’re so nostalgic for me because Alyssa and my grandmother used to always have them in her fridge (either for baking or for cocktails – or probably a mix of both) and I always used to sneak them out of the jar when she wasn’t looking because our mom never had them in the house, and they’re so delicious.

  1. Add the gin, lemon juice and simple syrup into a Collins glass (usually a couple of ounces larger than a highball glass due to the additional height)

  2. Fill with ice, top with club soda and stir to combine.

  3. Garnish with a lemon wheel and maraschino cherry (optional, but encouraged!).
