All we felt like doing today was eating tacos and having some fun dranks (but also let’s be honest, I could do that every day).
We didn’t want to limit ourselves to just one or two tacos, we wanted to eat a number of different things. In our minds, the best solution was to make a bunch of mini tacos, because you can down like 10 of them and still have room for all the other things your heart desires – in this case guacamole, ceviche and churros.
Ceviche is super easy to make and crazy delicious. And we made ours in a pineapple because it takes the party vibes up a notch – and we like pretty things. You don’t really need a recipe to make ceviche, you should just use lots of lime juice and follow your heart, but I’ll tell you where our heart led us.
- Cod (we used two pieces)
- 1 pineapple
- 5 limes
- 1 cucumber
- Cilantro (however much your heart desires, Alyssa’s still coming around cilantro so we took a moderate approach)
- Red onion (we used about half of one, about two tbs will do)
- 1 jalapeno
We served our ceviche in the actual pineapple, so if you go this route this video shows you how to do it in literally 1 minute and 15 seconds. – it’s super easy. From there, literally just cube all the ingredients and throw it in a bowl, adding enough lime juice to coat everything. It’s the lime juice that pretty much “cooks” the fish, so make sure you let it sit for 15-20 minutes. There’s some helpful tips and a great breakdown of how the lime juice transforms the fish here.
The shrimp tacos were inspired by this recipe, that I’m sure you’ve seen on Pinterest a gazillion times (except we swapped sour cream for plain greek yogurt because we wanted extra churros). How often this recipe comes up is proportionate to how good it is, we promise. And you can totally make it ahead of time, just make sure you put the arugula on the bottom before you add the sour cream or yogurt so the wonton cup doesn’t get soggy.
We bought the churros because as much as I like a good kitchen challenge churros seem like something that tastes better when someone else makes it. We picked them up from this place called I Love Churros, which is really a thing that exists, and is also aligned with how we feel.
For dranks, we couldn’t decide between beer or margaritas. So we decided to do both and made bulldogs, because YOLO.
Except, we wanted to take it to the next level. So we made watermelon margaritas and swapped out a cerveza for some Bud Light Lime (we affectionately refer to them as BLL’s). You can get the recipe here.
